Chai Spiced Cookie (Vegan)

Here’s a recipe for delicious Vegan Chai-Spiced Sugar Cookies! These cookies are soft, perfectly spiced with chai flavors, and 100% plant-based.
Ingredients:
For the cookies:
- 2 ½ cups all-purpose flour
- 1 tsp baking powder
- ¼ tsp baking soda
- 2 teaspoon Leely Chai Baking Spice
- 1 cup vegan butter, softened
- 1 cup granulated sugar
- ¼ cup brown sugar (optional for extra richness)
- 2 tbsp non-dairy milk (such as almond, soy, or oat milk)
- 1 tsp vanilla extract
- 1 tbsp apple cider vinegar or lemon juice (this helps bind the dough)
For the spiced sugar coating:
- ¼ cup granulated sugar
- 1/2 teaspoon Leely Chai Baking Spice
Instructions:
1. Preheat Oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. Prepare Dry Ingredients for the cookies:
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, Leely Chai Baking Spice. Set aside.
3. Cream the Butter and Sugar:
In a large bowl, cream together the vegan butter, granulated sugar, and brown sugar (if using) using an electric mixer or by hand until light and fluffy.
4. Add Wet Ingredients:
Add the non-dairy milk, vanilla extract, and apple cider vinegar to the butter mixture and mix until combined.
5. Combine Wet and Dry Ingredients:
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. The dough should be soft but not sticky. If it's too sticky, add a little more flour (1 tbsp at a time).
6. Chill the Dough:
Chill the dough in the fridge for about 30 minutes. This helps the cookies hold their shape during baking.
7. Prepare the Spiced Sugar Coating:
In a small bowl, mix together the sugar and Leely Chai Baking Spice for the coating.
8. Shape and Coat the Cookies:
Once the dough is chilled, roll it into 1-inch balls. Roll each ball in the spiced sugar coating, making sure they’re fully coated.
9. Bake the Cookies:
Place the dough balls on the prepared baking sheet about 2 inches apart. Slightly flatten each ball with the back of a spoon or the palm of your hand. Bake for 10-12 minutes, or until the edges are set but the centers are still slightly soft.
10. Cool and Serve:
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Enjoy!
